Ingredients

  • 1 1/4 cups all-purpose flour
  • 6 tbsps cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/4 cup granulated white sugar
  • 2 egg yolks
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract 
  • 1/2 cup Andes Peppermint chips
  • 1/4 cup semi-sweet chocolate chips
  • 4 tbsps crushed candy canes

Instructions

  1. Preheat oven to 350 degrees and line two baking sheets with parchment paper or baking mats.
  2. Add butter, brown sugar, and granulated sugar to a large bowl. Mix with an electric mixer for two minutes. 
  3. Add the egg yolks, peppermint extract and vanilla. Mix on medium speed for two minutes. 
  4. Add in the flour, cocoa powder, baking powder, baking soda and salt and mix until combined.
  5. Add in the peppermint chips and chocolate chips and mix just until incorporated.
  6. Scoop the dough and arrange them two inches apart on the prepared baking sheets.
  7. Bake the cookies for 10 minutes, let them cool on the baking sheets for 2 minutes, then transfer them a cooling rack for 10 minutes. 
  8. Sprinkle crushed candy canes over the cookies and Enjoy!
